A great “seasonal” replacement for avocado toast!
15 mins max prep and cook time
Ingredients (for pictured) :
- 1/3 cup cubed butternut squash (I buy the frozen organic stuff)
- Smoked paprika
- 1 tbsp crushes pistachios
- 1 cup chopped arugula
- 2 eggs
- I slice multigrain Ezekiel Bread
Steam the squash while poaching the eggs. Once the squash is soft strain and mash with a fork. Add salt, pepper, and paprika to taste.
Remove poached eggs while the yolk is still soft or runny.
Toast the bread and cut in half.
Spread the squash generously on the bread, cover with arugula, top with poached eggs and pistachio!
